Success! Vegan Breakfast FOUND!

Transitioning from a vegetarian to a vegan has been a slight struggle.  Right now the biggest struggle I have with veganism is eating out.  Where I live, there are no vegan options unless I want a boring salad.  If we have all figured it out by now, I hate salad.  I love food, actual food, but in my mind salad is not food.  If you love salad, power to you man!  I cannot do it!  But, back to the original point of this post.  Besides eating out, finding an inexpensive yet delicious and easy breakfast has been my biggest struggle.   However, I come to you today to say, I finally have my breakfast and it tastes AMAZING!

Now, if you are vegan, I’m sure you have already heard of, if not tried or eat regularly, scrambled tofu.  The recipes I have tried were not appealing to me.  Having onions and peppers in the scramble didn’t feel like scrambled eggs and the amount of nutritional yeast most recipes called for threw off the overall flavor in my opinion.   So having the basic understanding of scrambled tofu, I went to tweaking!  After quite a few tries, I finally have a perfect scrambled tofu.  Well, perfect to me.  It reminds me of the scrambled eggs I use to always make for breakfast.  Honestly, if I didn’t make it, I would not know I was eating scrambled tofu.  Yes, it is that good.

First off, most of the credit for the scrambled tofu goes to Bolner’s Fiesta Fajita Seasoning.  No, I am not sponsored by them.  Wait, can you get sponsored by seasoning companies? lol  Seriously though, this stuff is pure magic.  I literally use it on everything.  Something calls for salt and pepper?  This is what I use.  Hell, I didn’t even have actual salt on hand for the longest time because this is all I would use.  Yes, even for salting water for pasta or potatoes.  I have used this spice for as long as I can remember.  My parents used this spice.  It is extremely prominent in Texas.  Living up here in Washington, I have to order it online, which I gladly do.

To make my version of scrambled tofu, I heat up a small to medium sized skillet medium to medium-high with about 1/2 a teaspoon of coconut oil (my stove it is about a 6 in ranking for reference).  Taking a single serving of extra firm tofu without draining, about 1/5 of a block, I crumble it into the pan.  Forewarning, watch out, it pops!  I start browning that in the pan and sprinkle a good amount of fajita seasoning.  You can use salt and pepper.  If using salt and pepper, I would recommend sprinkling a little bit of garlic and onion powder.  Just a skosh.  Work it for a bit till it starts getting slightly golden, this usually only takes a few minutes.  Once slightly golden, splash in 1 to 2 tablespoons of water, about a teaspoon of nutritional yeast and just a pinch, an itty bitty pinch of turmeric.  Tumeric just helps with the color, if you don’t have it on hand, don’t even worry about it!  Cook for a few more minutes, till most of the liquid has evaporated and viola!  Amazing scrambled tofu!  I will usually add a bit more of my fajita seasoning to it, so feel free to add a bit more salt and pepper to taste if you need it!

Now, I don’t just eat scrambled tofu.  I make my old, everyday breakfast by adding in a tablespoon of guac to the scramble and two pieces of vegan breakfast sausage links.  The recipe that I have found and LOVE is by Sarah’s Vegan Kitchen.  It is her Vegan Maple Breakfast Sausage.  So freaking delicious!  Including the sausage (which I have gotten about 26 links out of, using about 1 oz of mixture per link) and guac, my overall caloric value for breakfast is 219 calories, yet I am fully satisfied and ready to take on the day.  If you are interested in the fajita seasoning I have mentioned, let me know!  I’ll try and come up with a dupe recipe to help tide you over.

Quarterly Empties: January – March 2018

Now I don’t know about you, but man do I love watching empties videos on YouTube!  They are probably one of my favorite videos because I find it so interesting to see what people actually use up and what they would recommend.  That is how I know if something is truly a favorite or now.  Monthly favorites, for the most part, don’t interest me; I’m interested in the empties!  So today, that is exactly what I bring you!  I tried breaking down everything in sections to be a little more helpful.  Let’s get into it, shall we?  Quick side note, NONE of the links below are affiliate links.


First off is body care.  I finished off a toothpaste, Colgate Total plus Whitening ($3.99), which is my favorite toothpaste.  There is a large 375 count container of Kirkland Brand Glucosamine ($14.49) which is for my girls.  They get two capsules of Glucosamine every single day for their joints.  Two products from Bath & Body Works, one being my favorite body wash fragrance of all time in Sensual Amber ($12.50) and a Halloween Foaming Handsoap in Purrfect Pumpkin (Seasonal $6.50).  There is also a small, I guess you would say travel size body mist by Victoria’s Secret in Sexy Little Things Noir (Discontinued $14) (which dear God I am so excited that is finally finished!)  Lastly, the product I’m most proud of, a Body Shop Body Butter (Discontinued $20).  I can’t recall the scent, but I hate putting on lotion, so body lotions take me what feels like a lifetime.  I am so relieved to finally get that out of my collection!


Skincare is so difficult for me to use up, so these 4 items I am beyond stoked about finishing.  The Purity cleanser by philosophy ($44) is a wonderful cleanser.  This bad boy was the 24oz one, and man that took me over a year to use up!  I am currently working on my back up, but once that is done I will not be repurchasing because philosophy is not cruelty-free.  T.N. Dickinson’s Witch Hazel ($3.29) is what I use as my toner morning and night.  It costs around $4 at the drugstore and I swear by that stuff and a huge bonus, it is cruelty-free!  The Laneige Water Sleeping Mask ($25) was amazing!  I used it as an actual moisturizer than a mask because I have normal to oily skin so I tend to like more of the water-gel formulas.  Unfortunately, not cruelty-free so will not be repurchasing.  Lasting is the Eva Naturals 20% Vitamin C Serum ($14.95).  That was okay.  I didn’t irritate my skin at all, but I did not notice any changes in my skin.  Wouldn’t repurchase.  It is cruelty-free.


For the last three months, I have hardly had any makeup empties.  I did finish the Catrice Cosmetics Liquid Camouflage Concealer in 10 Porcelain ($5.99).  I know there looks like there is still product, but I scraped as much as I could from the sides and I wasn’t able to pull the stopper out.  If I can find a lighter shade in this, I would absolutely repurchase!  Catrice Cosmetics is cruelty-free.  The L’Oreal Voluminous Lash Paradise Waterproof Mascara ($9.99) in Blackest Black is a wonderful mascara.  I currently am working on another one and have 2 backups.  Unfortunately, once those are used up, I will not be repurchasing due to L’Oreal testing on animals.  Lastly, there is only a picture of one here, but I have used up 3 packages of the Kroger brand makeup wipes ($2 each).  I will not be repurchasing once I use up my backups because I could not verify if the Kroger brand is cruelty-free.


Lastly, I have used up some deluxe sized samples.  Now, I know what you may be thinking.  However, these things tend to sit in my drawers and are never used up.  So, I have made it my mission this year to use up as many samples as humanly possible!  I am super excited to say 4 have now been moved out!  We have the Origins Original Skin Retexturizing Mask with Rose Clay ($27 for 3.4oz), the OleHenriksen Counter Balance Mattifying Moisture Creme ($40 for 1.7oz), the GlamGlow Supermud Clearing Treatment ($59 for 1.7oz), and the Sunday Riley U.F.O. Ultra-Clarifying Face Oil ($80 for 1.18oz).  Both Sunday Riley and OleHenriksen are cruelty-free.  However, I would not purchase the full size of any of these samples.  The masks were okay, nothing amazing.  The moisturizer I didn’t notice it helping me stay less oily throughout the day and I didn’t like the tackiness it left my skin.  The Sunday Riley U.F.O. oil actually worked really well, however, I literally battle one pimple a month, so for me, this wouldn’t be worth the price.

So, not including the samples, I used up $180.70 worth of products in the past 3 months.  Considering I am famous for starting products, then leaving product at the end and never finishing it, I am pretty proud of myself.  I hope I can keep this up because I am curious how many products I can use up and see the grand total.  Do you keep track of your quarterly, bi-monthly, or monthly empties?  If so what did you use up?  I hope you found digging through my trash somewhat interesting!  Well, this post has turned out quite long, so I think I should leave it as that.  Thanks for stopping by and until next time!

Hot for Food’s Vegan Carbonara with Zucchini Cream Sauce

There are times where I reflect on my life and think, yep, I should have been born an Italian. Other than Mexican/Tex-Mex, Italian cuisine helps keep me in my happy place. Who am I kidding, food in general IS my happy place. In all seriousness, pasta (besides pizza) is my one true love. If all I could eat was pasta, any kind of pasta dish for the rest of my life, I would most likely die a happy woman.

Going on this vegetarian transitioning to veganism lifestyle has been fairly easy for me. I have been vegetarian before as well as vegan, but I truly feel now is the best time for transitioning. There are so many wonderful options, substitutions, cookbooks, blogs, YouTubers, etc out there that makes transitioning to this lifestyle less stressful and a hell of a lot tastier.

I don’t know about you, but I am definitely a #HotForFoodie, have been for a long while. However, I had yet to EVER recreate a recipe. So, what better way to start then testing out a Recipe?! (Any #HotForFoodies see the reference ). This is not my first rodeo with this recipe, I have made it about 3 times now and it has a permanent place in my recipe collections. What recipe am I talking about, you may ask? Well, besides the fact that I am 98.4% positive you can see from the title, I’ve been whipping up Hot For Food’s Vegan Carbonara with Zucchini Cream Sauce.

It was genuinely everything I could hope for, super creamy, a nice bite from the pepper, and my substitution with bits of seitan instead of vegan ham was just what I was looking for. I also skipped out on the vegan parm, just because I have never in general been a huge parm fan. Besides waiting for the water to boil for the pasta, this recipe took less than 20 minutes to pull together. Perfect for evenings when you are starving (me) and want something quick, yet delicious. A couple of things I truly appreciated about this recipe, besides the speediness of it, was the short ingredient deck list and no hard to find or crazy ingredient. I don’t know about you, but I get a little agitated searching for “easy” or “quick” vegan recipes, and the ingredient list is longer than my body with products that are not readily available at my local Safeway or Fred Meyer. The ingredients for this recipe are also not expensive. Halle-freaking-lujah!

Now, is it low in calories? Well, if you break it up into 4 servings, it’s not too bad. However, don’t do what I did and eat the entire batch. Yeah, it’s that good. Lauren (the creator of Hot For Food) had it broken up into 2 servings. I only eat twice a day, so for me, one actual serving is not terrible and fits within my caloric daily value. Although, again, not if I eat the entire batch in one sitting. Using MyFitnessPal as my calorie tracker (not sponsored, I genuinely use it), it estimated that one serving of the carbonara was 538 calories with roughly 67 grams of carbs, 14 grams of fat, and 30 grams of protein. I am focusing on lowering my calories only. I don’t care about my carbohydrate or fat intake because I believe all things can be eaten in moderation (where the hell was that when I scarfed the entire batch down??) So you will have to decide whether this recipe for any health concerns or dietary restrictions.

So, long story short, I highly recommend this pasta, but, be forewarned. It is highly addicting! Does it taste 100% exactly like a dairy laden Carbonara? Well, no. But I can say I recommend this over a traditional carbonara any day. It doesn’t leave you feeling heavy, it’s immensley satisfying, and huge bonus, no animals were harmed in the making or eating of this recipe! What recipe should I test out next? I was thinking of of trying The Edgy Veg’s Southern Biscuits and Gravy recipe from their book. I’m sure it would be loaded with calories, but maybe doing have a serving would be worth it. What’s the Plan, Stan? The Menu Plan!

Welcome to yet another Monday ladies and gentlemen!  How do we feel about it today?  I’m, eh.  Just eh.  I feel a little productive today, did some cleaning, caught up on laundry, dealt with a maintenance issue (toilet decided to flood water all over my floor yesterday) and now, here I am at my computer typing up a post.  I have truly been working on being consistent.  Not only with my health and fitness journey, but along with my posting.  My goal is Monday, Wednesday, and Friday at 4:00pm.  So far, so good.

Thinking about what I wanted to post for today, I noticed I haven’t posted any type of menu plan or meal plan, and even though I don’t follow one per say, I love having ideas for what to make for dinner.  Scouring through my pantry and fridge, I assessed what I have on hand and how I can use them for dinners.

In my pantry, I have TVP (textured vegetable protein), vital wheat gluten, flour, baking powder, nooch (nutritional yeast), tapioca starch, pasta, rice, sugar, cornstarch, chickpea flour, vegan mayo (I literally have 4 backups, I get them on sale and stock up), pasta sauce, tomato paste, diced tomatoes with chiles, refried beans with chiles, vegetable broth, canned chickpeas, canned cannellini beans, corn, peas, saurekraut, and pickles.

For vegetables, I’ve got mushrooms, onions, garlic, carrots, zucchini, potatoes, English cucumbers, poblano peppers, and about half of a green bell pepper.

In the fridge and freezer, I have got some silken tofu, extra firm tofu, guac, seitan (both beef flavored and chicken flavored), soyrizo, nacho cheese sauce (vegan), pizza dough, breakfast sausages, meatballs, hoagies, English muffins, corn, broccoli, peas, and peas and carrots.  I also have hoagies and pita bread sitting on top of my fridge that I need to use up before it gets moldy.

So overall, I have quite a bit of food, or at least the basics to make quite an array of dishes.  So, even though I am not really good at saying, this is what my menu is for Monday, Tuesday, yada yada yada, I have some ideas for meals that I thought I would share.

The extra firm tofu goes to my breakfast every morning.  I make scrambled tofu with a side of sausage and guac.  Pretty much does not change.  When I had a longer run than normal on Saturday, I did make a pancake for myself (damn was it good) and I think I will continue to do that for long runs just to get in a few more carbs.

With the silken tofu, I plan to make some vegan Mozz for pizzas as well as some sour cream for any Mexican food.  For the rest, I have got some yummy ideas.  Well, least I think so.  My favorite cuisine has to be Mexican food.  Again, grew up in San Antonio, so Mexican food is literally in my blood.  I’m still working on perfecting the vegan Carne Guisada recipe, so Carne Guisada tacos with cheese are DEFINITELY on that list, with homemade tortillas.  Fajitas are also on that list.  I need to use up those poblanos before they rot.  I would also like to try my hand at some enchiladas with homemade enchilada sauce.


I also want to have some sandwiches and wraps in my back pocket, I do have those hoagies and pitas to use.  So, Gyros, Cheesesteaks, and Reubens are a must have!  Curry also sounds pretty good, mostly because, when does curry sound like a bad idea and two, it has been a little chilly still up here in Washington.  Lastly, PASTA.  Life is not complete without some pasta in it!  So, I was thinking of doing Hot For Food’s Vegan Carbonara with Zucchini Cream Sauce, some Spaghetti & Meatballs, and maybe some traditional spaghetti with garlic bread.

Hopefully, with the amount of ingredients I have on hand, I won’t have to spend too much on groceries this month.  I am out of almond milk, so that is a definite pick up at the grocery store, along with garlic and onions, running a bit low.  The only two other things I foresee is extra firm tofu and guac.  If you think of anything that I can make with the ingredients listed, let me know!  I love finding new recipes to try out!  Speaking of meals and recipes, what are some of the things you plan on making this month?  What are you craving?  Let me know!  It might give me some inspiration to whip up other dishes!  Well, thank you for stopping by and until next time!

My Makeup Aesthetic Tag

Today I am switching things up and doing a YouTube Tag that I was absolutely intrigued and fascinated by!  Elle S of ShadowSmoked (her Instagram and YouTube) came up with this tag and 10 questions asking you to define or at least explain your makeup aesthetic.  Honestly, this was much more challenging than I anticipated.  In my head, I know who I am, what I like, and how I like to represent myself to the world.  Explaining it, however, was much trickier than I realized!  I hope you find this as interesting as I did and maybe we can spread this tag around!  Now, let’s get the questions!

1. How would you describe your personal aesthetic or style when it comes to makeup?
My makeup aesthetic is much like my daily life.  It is all about red, black, and grey.  With makeup, I also enjoy throwing in some cool-toned grey-browns.  I tend to gravitate towards smokey eyes using said colors and cool, grey-based lips.  Although I will definitely through on a black lipstick.  Think of a rocker/biker chick, what you would picture that type of makeup, but leaning more towards a variation of vampiric goth.  Also, all matte (well, except for a highlight).  I am not a fan of shimmer or glitter.

2. Who or what has influenced your stylistic choices?
Early 2000’s Angelina Jolie has played a huge role in my overall aesthetic.  I have been watching her films for years and I absolutely adore her and who she is as a person.  She is unequivocally herself and she has never apologized for it.  When I see images of her below, her overall look gives me inspiration on what makeup I want to do to emulate what I strive to be.  Does that make sense?  She is a badass.  I strive to match who I am as a person with my overall look.  Also, vampires.  I am a huge vampire junky.  Not Twilight shit, no.  I’m talking Dracula, The Lost Boys, Interview with the Vampire, Buffy, I could go on for DAYS.  Again, it’s not so much the makeup that I’m drawn to, but what I draw from the clothing style and how characters or people hold and carry themselves.  They exude confidence and are fucking badasses.  So I create looks that I feel match that.  Does any of this make sense?

3. What are some of your previous makeup phases?
Lord have mercy.  Well, I think if you are around my age or a bit older, you definitely went through the blue eyeshadow phase with no eyebrows.  Lol.  I didn’t shave off my eyebrows or anything, but filling in your eyebrows wasn’t really a thing when I first started getting into makeup.  I also tried the whole “glam” look thing, the more popular looks you see on Instagram.  I didn’t truly like it on me.  It didn’t feel like me.  So, other than that, I’d say those are about it.  I still wear black eyeliner and wear black lipstick.  I did those when I was younger, but I feel I have more knowledge on how to work with them better.

4. What combination of existing brands would make up your perfect brand?
Overall, Kat Von D Beauty is my favorite brand, packaging, and product wise.  The Shade & Light Contour and Eye Contour palettes are holy grail status.  Her Metal Crush eyeshadows are amazeballs.  On the 20th she is launching her brow products and you bet your ass I am picking those up as well.  However, let’s talk about the actual combination.  Take the packaging and most of the products from Kat Von D Beauty, the foundation and complexion products of Fiona Stiles Beauty, the brow products and highlighters from Anastasia Beverly Hills, the eyeliners & eye products from NYX Professional Makeup, and the Always On Liquid Lipsticks from Smashbox and BOOM!  My ideal brand.


5. Name 5 products that define your makeup style right now.
The Fiona Stiles Matte Finish Foundation Concentrate, the Anastasia Beverly Hills Brow Wiz, the Kat Von D Shade & Light Eye Contour Palette, mascara (no preference really), and a liquid lipstick.  Matte face, eyes, and lips.  Haha.


6. What kind of style or aesthetic do you wish you could pull off?
The classic 1940’s, 1950’s pin-up has always been one of my favorite looks.  Unfortunately, I have never been able to swing it.  The bold, red lip, the cut-a-bitch wing, the victory rolls.  The entire aesthetic is beyond stunning to me.  I’m not a very glamorous person, it is not in my comfort zone, but I do love it.  Marilyn Monroe and Rosemary Clooney are two of my favorite icons in that era.  White Christmas is one of my favorite movies, the makeup, hair, wardrobe.  Lord have mercy, just takes my breath away.

7. What style are you over?
The Instagram Famous/Kylie Jenner-esq glam.   For me, it is extremely boring and unoriginal.  You scroll through feeds of more major makeup companies and it is literally nothing but bronzy glam with a nude, pouty lip, huge wings, giant lashes, and glitter.  It is not inspiring for me, however, it is also not my style in the slightest sense, so to each their own.

8. Who are some of your favorite makeup artists?
I don’t tend to follow too many actual makeup artists.  But the ones that I do really stand out in completely different ways.  One is Jess or JKissa (Instagram YouTube) as she goes by on social media.  The way she plays with color and contrast is so stunning.  The tips she gives and a HUGE bonus, she is vegetarian, cruelty-free and a HUGE animal and Pit-Bull advocate… so in my books, she is fucking amazing!  The other makeup artist I love is Fiona Stiles.  Her foundation is literally my holy grail.  When she re-released it on, I picked up 3 bottles.  I enjoy her makeup style for the simplicity and beauty.  The skin looks so beautiful, looks seem so effortless, yet they make an incredible statement.  She is bold without being loud.  Love her.

9. Do you have any favorite editorial/avant-garde makeup looks?
When thinking of an answer to this question, Gothic and Amazing on Instagram popped up in my head.  They showcase a lot of wonderful people with such skill and talent.  It truly blows me away.  For me, it showcases more Gothic editorial, as well as gothic makeup in general.

10. What is your favorite time period for makeup? Least favorite?
The 90’s grunge era.  I see a lot of recreations but I honestly feel most don’t even come close.  I love the dark lips and eyes, the messiness.  Hell yes.  Least favorite?  The 80’s.  Sorry, Stephanie!  I’m not into vibrant colors, glitter, huge hair, so clearly, the 80’s would be opposite of my style.

What I Eat in a Day: Vegan Edition

Now, if you have been following my blog for a little bit, or you happened to read the side description, you might be aware that I am a vegetarian.  What you may or may not be aware of, is the fact I’m transitioning over to veganism.  Honestly, it is going much smoother than I originally anticipated.  I’ve been vegetarian before as well as vegan, but I didn’t have a lot of references or meals to help me eat something other than one meal for breakfast, lunch, or dinner, or eat nothing but storebought, expensive pre-made meals.  So, to help share some things that I eat, I thought I would do a little “What I Eat in a Day” type of post!


First up, breakfast.  Now, my vegetarian everyday breakfast consisted of scrambled eggs, two vegetarian sausage links, guac, and coffee filled creamer and Splenda.  Well, not too much has changed.  I make tofu scramble with two vegan breakfast sausage links, guac, and coffee with a splash of unsweetened almond milk.  I’ve tried several different recipes, but in the end, I came up with my own and honestly I can’t tell the difference.  Hell, I feel the picture below truly looks like eggs!  What do you think?  If you are interested in a breakdown of my vegan breakfast including how I make my tofu scramble, I’ll have a post later in the month going over it.  Including the coffee, the caloric value of my breakfast was 270 calories.


Now, lunch.  On this day (which was this past Monday), I had a few errands to run.  Breakfast was around 6am.  Lunchtime came around 1:30pm and boy was I famished.  At first, I couldn’t think of anything to make.  Don’t you hate that?  You are so hungry yet you have no idea what you wanted?  Eventually, I thought of something simple.  A Boca Spicy Chik’N Burger with fries.  I heated up my oven, cooked the fries and patty, and assembled the burger.  I found buns at Safeway that are 120 calories per bun and they are the perfect size for the burger.  They also fit the Beyond Meat Burger as well.  I did a teaspoon of vegan mayo, a teaspoon of dijon mustard, the patty, two slices of tomato, couple slices of yellow onion, and of course guac.  I think I have mentioned it here before, but definitely on my Instagram, guac = life.  I eat guac every day, no exaggeration or lie.  I also served the fries with a side of ketchup.  The total caloric value of my lunch was 500 calories.

Last, but not least, dinner time!  I was looking forward to dinner all damn day.  Not because I was starving or anything.  No, I was looking forward to making Carne Guisada tacos.  To give a little backstory, I am originally from San Antonio, Texas and I was raised on Mexican/Tex-Mex food.  It is literally in my blood.  One of my favorite tacos to eat (usually for breakfast honestly) was Carne Guisada tacos.  It’s beef in a gravy, put in a tortilla and usually covered in cheese (and when I say covered, I mean doused in cheese).  It may not sound pleasant to some, but for me, it was straight heaven!  I’ll be doing breakfast taco recipes in the future, but for now, back to the Carne Guisada tacos.  Now, I am very particular about spices that I use.  There is one spice in particular that I actually order online from the company’s website because it is pretty much only sold in Texas, least that I am aware of.  It is called Bolner’s Fiesta Brand Fajita Seasoning.  I order the restaurant size and order multiple at a time.  I got through a large container about every 2 months.  Well, I forgot they had Carne Guisada seasoning.  So, on my last order, I purchased a small bottle to try out.  This day was the day I was putting it to use!


Before I started prepping the seitan that I was going to use for this recipe, I needed homemade tortillas.  Yes.  I make homemade tortillas.  I didn’t use to, but moving up to Seattle they do not have decent tortillas in the slightest.  Luckily, homemade tortillas are super easy to make.  It literally requires 4 ingredients, flour, olive oil, water, and salt.  In my case, I use fajita seasoning for extra flavor.  It takes no time at all and it is well worth it!  The Carne Guisada part was beyond easy.  I just diced up some seitan, browned it up a bit in the pan, added water, then stirred in some of the Carne Guisada seasoning.  Let it simmer for a bit and then added it to the tortillas.  I also added about a tablespoon of Hot For Food’s The Nacho Cheese sauce from her book and a tablespoon of guac on each taco, because again, guac = life.  Quick note, next time I won’t add as much Guisada seasoning, it came out a bit too salty, but with that being said.  FUCKING AMAZING!  It reminded me so much of Carne Guisada tacos in Texas.  I mean, my eyes were bulging right out of my skull with how good this came out!  You bet your ass this recipe is going to be in constant rotation.  I am going to tweak it a bit and do a full break down of what I did, just in case anyone is interested.  Plugging everything in, these two tacos, including the guac and nacho cheese sauce came out to 463 calories.  Next time I won’t use as much seitan either, I didn’t need as much as I did.  So for this day, my total caloric intake was 1,233 calories.  My daily aim for my caloric intake is between 1000 and 1200 a day, if I go a bit over, I don’t stress about it.  I felt satisfied all day, I ate things I truly enjoyed, and that is what is important on a fitness journey.  Never depriving yourself and figuring out ways to make things work.
